Known in some circles as the ‘vegetable magician’, Alain Passard completely eliminated red meat from his menus in 2001.
The move, which came after his stint as a butcher, saw the Frenchman embrace vegetables entirely in his culinary creations –going as far as purchasing an old vegetable plot and reviving it. To ensure that only the freshest and most organic greens were produced in it, Passard banned the use of chemical fertilisers in the plot. He also forbade the use of a tractor, saying it would destroy the long-term natural balance.
