Indian Hotels Company Limited (IHCL) has launched its second Thai Pavilion in India at Vivanta by Taj – Begumpet, Hyderabad. Having embarked on a journey in the early 1990s to offer guests the Thai experience, Chef Ananda Solomon introduced the Thai Pavilion to the country and established it as a ‘culinary destination’ for food connoisseurs from across the world.

The new Thai Pavilion is an essence of 15 years of extensive research by Chef Ananda and his team of expert chefs. The use of authentic hand-pounded spices such as Thai holy basil, mint, cilantro, lemongrass, and galangal (Thai ginger), and premium ingredients such as Australian lamb chops, Pan Grilled Scallops with Orange, Crispy Soft Shells Crabs (Poo NimKrob) and Bamboo Fungus ensure that guests are offered traditional Thai cuisine.
Reflecting the ethos of Thailand, various elements are combined to present a grand ambience at the restaurant designed by the internationally renowned Thom Catallo.
Thom’s design rendition is a move away from conventional Thai décor and presents a contemporary version. The restaurant features a wooden wall, which is incised with deep red and golden inlay work in lacquer to replicate Thai motifs. The delicate floor-to-ceiling mirrored screen reflects splashes of vibrant colours. The armed wooden chairs and fretwork of traditional Thai craft suspended from the ceilings are in contrast with modern works of arts, juxtaposed against hand-carved and blown-glass chandeliers.
