The famous "Dum pukht" style of cooking hereto available only in five star's would now be available at affordable prices an eateries close to your home. At least that is what celebrity chef Ishtiaq Qureshi has set out to do.
Having established more than half a dozen restaurants by the name of Kakori House in Mumbai and one in New Delhi, Qureshi, whose forefathers used to cook for erstwhile Nawab's of Awadh region, has embarked upon a plan to open a chain of restaurants throughout the country.
" We are now planning to expand our network and open eateries across the country even abroad.
But we will take it slowly and be careful in choosing our partners as quality and authenticity of taste is sacred to us" said Ishtiaq at his newly opened Kakori House in Aminabad area of Lucknow.
He is the son of the legendary Master chef of ITCBSE 0.18 % group of Hotel's Imtiaz Qureshi. The senior Qureshi is said to have brought the authentic Awadhi taste confined to the kitchens of Nawab's to the national capital through the ITC chain of hotels. Several heads of state, Prime Minister's and film stars and cricketer's from India and Pakistand swear by the food made by the senior Qureshi and his sons.
Ishtiaq Qureshi says that while he has perfected the art of Awadhi cuisine and 'dum pukht' style of cooking there are not many trained chefs which can help him expand his chain of restaurants by the name of Kakori House.
Starting more than 10 years back in Mumbai, Kakori House, which serves authentic Awadhi cuisine including the melt in you mouth Kakori Kebabs, now has eight restaurants across the country.
" Kakori House is targeted at those who enjoy Awadhi cuisine cooked slowly in the dum pukht style at affordable price. We want to popularise Awadhi fare and Dum pukht style of cooking and take it out of five star's" said Ishtiaq Qureshi. He lamented that even in Lucknow where Awadhi cuisine was perfected ages ago not many places serve food prepared in the dum pukht style of cooking.
