Key Responsibilities:

• Set Food and Beverage objectives and guidelines and ensure all subordinates follow thoroughly
• Ensure the profitability, efficiency and creative running of each Food and Beverage restaurant & bar, banqueting and in-room dining
• Responsible for and accountable for the departmental operating budget and find ways of maximising and increasing sales and/or yield for each revenue centre
• Plan and review Food and Beverage marketing strategies/budget/capital expenditure/forecast
• Control the Food and Beverage cost with the Food and Beverage Cost Controller to achieve budgeted profit goals
• Work closely with the Executive Chef regarding the production of the kitchen and keep the kitchen informed on any guest comment
• Plan menus and prices for all restaurants in order to meet the budgeted sales volume
• Ensure the operation in full compliance with all safety and HACCP requirements
• Maintain a team of well-trained and motivated Food and Beverage staff in order to keep up the image of the hotel Required Skills
& Experience - Degree in Hotel Management from a reputable international hotel school


Key Requirements:

• Minimum 10 years' working experience with at least 6 years of Food and Beverage experience
• Good knowledge in 5 star hotel operation for a similar position of which Asian hospitality experience is preferable
• Strong in developing strategic business and/or Food and Beverage plans
• Skillful in Food and Beverage budget preparation, profit & loss statement analysis, forecasting and capital expenditure preparation
• Familiar with bench-marking activities
• Forward planning and good decision maker
• Capable in dealing with a multi-cultural workforce and people oriented
• Strong in developing teams and individuals
• Experience in quality driven projects and change management
• Fluency in English is required
• Fluency in a second European language is very desirable, preferably French
