Golden Falcon Restaurants Co Pvt Ltd, which offers Lucknowi cuisine under the brand - Bighdey Nawab is set to open 50 outlets in two and half years. The company is looking at cities including Delhi, Chandigarh, Bengaluru, Chennai, Thiruvananthapuram and Jaipur for expansion.
The brand was started four years ago in Pune as a take away model and is now expanding as a restaurant chain. With two take away outlets at Vashi and Thane each, the company has signed up to open outlets at Surat and Vadodara in Gujarat; Vijayawada in Andhra Pradesh; Thane, Ahmednagar and Nashik in Maharashtra. All these outlets are scheduled to open by February 2013. Bigdhey Nawab offers kebabs, biryanis, rolls, rotis, salaans, naans, etc.
Santosh Kulkarni, Director, Golden Falcon Restaurant Co. Pvt. Ltd. informed, "We started with take away format and with tremendous demand from our customers, we decided to go for restaurant format. We follow franchise mode of operations, wherein we provide technical know how to our clients to run the outlet. In addition, we provide the staff and chef to open the outlet."
Talking about the mode of operations, Kulkarni, said, "Besides space and budget, the culture of the city is an important deciding factor as in terms of whether to have a take away or restaurant format. A take away format required Rs 15-17 lakh and minimum 300-square feet of carpet area where a restaurant would require 1100-1300-square feet, which will offer 25-30 covers."
