Job Description
To head the F & B Production Deptt;
Responsible for Hiring, training, duty scheduling of F&B Production staff & retaining them;
Managing all day to day aspects of Food preparation & production in various kitchens for all F&B outlets Restaurants, Banquets & In-room dining as well as staff dining;
Planning outlets menus, cyclic menus, daily specials & creative menus for special events / food festivals, etc.;
Standardization of food recipes, portion sizes & presentations;
Establishing relationship with purveyors through Food Purchasing committee;
Establishing Food consumption patterns & requisitioning (inventory management);
Inspecting on receipt & controlling quality of all raw Food materials including various stages of storage;
Controlling the Food Cost;
Ensuring health, hygiene & sanitation issues are handled viz-a-viz HSE, HACCP & FSSAI and
To look after kitchen stewarding.
Salary:INR 5,00,000 - 6,00,000 P.A.

Desired Candidate Profile
Education:(UG - Diploma - Hotel Management) AND (PG - Post Graduation Not Required) AND ( Doctorate - Doctorate Not Required)
IHM / Catering / Culinary Arts Graduate with excellent exposure in 5 star hotels / resorts with good Banquet operations.
Should be a good creative Chef and Administrator with knowledge of world cuisines.
Degree / Diploma in Hotel & Catering Management / Culinary Arts from an IHM or similar Institute.
