Job Description
Executive Chef for:
- Marriott Café - All day dining; buffets and a-la-carte
- Mikado - Japanese Restaurant; fine dining
- Manhattan Steakhouse; fine dining
- Banqueting (up to 40 tables, weddings, meetings) + outside catering
- 3 bars / lounges
- Room service
- Executive Floor Lounge
(Chinese restaurant on property but leased out)
Focus on:
- Breakfast buffet: quality, selection, presentation ... creating the best breakfast in town!
- Revising menus of all outlets
- Training
- Implementing Marriott standards and procedures
Other information:
- Hotel open since 1999 and with downtown (CBD) location
- High occupancies, mainly corporate guests
- Position vacant for over 6 months
- Reporting to Director of F&B
- Many opportunities to improve and show an upturn (!)
- New management team committed to further improve on all levels
- Marriott is expending fast in China
